YUMMY YUMMY CREPES!!

So one of the problems with touting healthy food is that sometimes people start to think you never eat unhealthy food. Which in our case is just simply not true. We love our treats and junk food. But...If you make it yourself, you can make it a lot more healthy (and most often a lot better tasting) than the grocery store (or restaurant) counterparts.

So with that introduction, I'm going to tell you about another one of our most favorite things that we ate on our trip. We actually had these in London on Portabello road. We had these for breakfast. These crepes were so big. They had this extra large crepe maker thing that they made them on right there on the street.
We had nutella and strawberries and yum it was good. So we've been wanting to make them at home ever since. I've made crepes for breakfast for several years now using this recipe. I'll copy it for you at the end in case the link gets broken. The recipe is wonderful. Make sure you spray your pan before each crepe or they will stick to the pan. First mix your batter. Then pour about 1/3-1/2 Cup of batter on a very large frying pan. Lift pan and kind of swoosh your batter around to make a very thin pancake.
Turn it over carefully when bubbles start to form all over. Then spread nutella on it right on the pan (if desired). It melts and makes it really yummy.
Then add your strawberries, bananas and whipped cream. YUM! This is so good. I could eat it every day, except it's not really all that great for every day, but you get the point. Okay, go make some! And enjoy!
Whole-Grain Crepes
Printable Recipe

*Makes 14-16 small crepes

INGREDIENTS:
2 eggs, beaten
1 tsp. baking powder
¾ Cup wonder flour (or 1/2 Cup wonder or whole-wheat flour and 1/4 Cup white flour sticks together a little better)
1 Cup milk
½ tsp. salt
3 Tbsp. melted butter

DIRECTIONS:
In a medium bowl, mix all ingredients very well until smooth. Heat griddle or frying pan on medium heat. Spray cooking spray or use a small amount of oil. Ladle batter onto griddle. Flip onto other side when bubbles form. Make sure to spray before each crepe or they will stick to the pan.

Serve filled with peaches, strawberries, low-sugar jam, nutella, bananas, whipped cream, or other fillings. You can also make savory crepes for lunch or dinner.

Pancakes with No-Sugar Pineapple Topping

I've been cooking up a storm lately, trying all kinds of new recipes. Most have been wonderful and I'm so excited to post them on this blog. Of course because I've spent so much time cooking (and gardening and recovering from our trip, etc, etc, etc), I haven't had time to post much...and so the balance of life continues.
But anyway, here's a great one for you to try for breakfast. The pancake recipe comes from my dear sister-in-law Lisa. I've been looking for a recipe for pancakes exactly like this one that she posted on her wonderful food blog. It really is as good as it looks - her picture is much better than mine so go look at it if you want an even more appetizing shot.

The no-sugar pineapple topping comes from the hillbilly housewife blog. I enjoy a lot of recipes from this blog. It's great and there's NO SUGAR!! Yeah! I've been trying to cut out sugar as much as I can so this is a good one!

Food Favorites from England & Wales

We just got back from a 10-day trip to England and Wales and it was wonderful and the food was fantastic. Not totally healthy, but it was good break and so very tasty. We had the best fish 'n chips on the planet in a little town called Criccieth, Wales which is right on the coast. If you ever go there, check out the Castle fish and chips shop right near Criccieth Castle. They were fantastic! And only cost 4 pounds. We went there both night we were there. The second night they had a line about 20 people long - I guess the place has a reputation. Here's a picture after about 30 minutes and the line had died out quite a bit.

Last night I tried to make some fish & chips for our boys to try. They didn't turn out as good because the fish wasn't fresh (it was frozen cod), but it was a good recipe. I think it would have been perfect if you could get your hands on some fresh fish. I had a hard time figuring out how hot to get my oil on the stove because I don't have a fryer. I had it too hot at first and that made the batter just fall right off the fish, but when I finally got it right, they turned out really good. I thought the batter on this recipe that I used was amazing. When our fish was done we had some leftover batter and we stuck some of the chips (already fried) in it and fried them up - yum! Another trick that we found was to coat the fish in flour before dipping it in the batter. That made the batter stick to the fish a lot better. When it was time to serve them, we sprinkle the fish and chips with some popcorn salt (very very finely ground salt) and malt vinegar. If you let the malt vinegar soak into the fish & chips it gives it the most wonderful flavor - yum yum! Is your mouth watering yet? :)

In London we also had some yummy corn from a street vendor that we made last night. This is all it was:

Chili corn
Frozen corn
butter
salt
Chili powder (or other flavors would be good too - experiment!)

Just cook up the corn and then mix in the other ingredients. It gave the corn the most delicious flavor. Really good. More recipes to come...we had a lot of good food!! :)
